Chunky Apple Pudding

Ingredients:

36 Saltine crackers
4 medium McIntosh apples
1 1/2 cups raisins
1 cup sugar
4 TBS margerine or vegetable oil
1/2 lemon rind
1/2 tsp cinnamon
1/2 tsp nutmeg
6 eggs

Directions:

Preheat oven to 350°.

Soak crackers under hot water briefly, to soften then drain and crumble into mixing bowl.

Pare and cut apples into thin sections and combine in bowl with raisins, sugar, margerine or oil, lemon rind, cinnamon and nutmeg.

Beat eggs well and pour over the other ingredients. Stir to coat.

Pour into casserole dish and bake for 20 minutes.
