Pork and Apple Stew
Ingredients:
2 lbs pork cut into cubes
1/2 cup flour
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
2 1/2 TBS olive oil
1 medium onion, chopped
4 large carrots, peeled and sliced
1 medium sweet potato (approx 1/2 lb), peeled and cubed
3 medium Yukon Gold potatoes (approx 1 1/2 lbs), peeled and cut into eighths
1 lb butternut squash, peeled and cubed
1 tsp cinnamon
1/2 tsp thyme
1/4 tsp nutmeg
1/8 tsp ground ginger
1/8 tsp ground cloves
1 cup apple juice or cider
2 cups water
3 cups sweet white wine
3 medium McIntosh apples, peeled, cored, and sliced into wighths
1 cup green beans, cut into 1" pieces
Directions:
Combine flour, salt, pepper and garlic in a ziploc bag. Heat oil in large skillet. Coat meat with flour mixture and brown on all sides. Reserve extra flour mixture.
In a slow cooker, combine all ingredients except apples and green beans,
and cook on low for 8 hours. Thicken with left over flour mixture dissolved
in a small amount of water. Add apples and green beans and cook on high
for 15 minutes.
